Day 85 - Popcorn {Tiny Tuesday}


This may seem strange, but one tiny thing I have become very thankful for recently, is the discovery of organic popcorn.

You see, I'm terribly allergic to corn, corn-syrup, dextrose, malto-dextrin... anything having to do with or made from corn.

But I love popcorn. 

I gave it up about 8 years ago. I've cheated a few times and had it anyway (my reaction is not life threatening, just painful and annoying)... but I've always paid for it with a week of severe headaches.

However, Pinterest to the rescue!! I read an article about organic foods not being GMO versions of the food. I took a risk and tried the organic, since I know that GMO foods do cause a problem with me.

Success! Absolutely NO allergic reaction and it is SO much better than "regular" popcorn.


Microwave Popcorn {From Organic Kernels}
1/3 Cup - organic popcorn kernels
2 Tbsp - butter (room temp)
1/4 Tsp - salt
1 - brown paper bag
  • Place kernels and salt into brown bag.
  • Fold edges of bag over twice (about 1 1/2 inches each time) and crimp as best as possible.
  • Place in microwave with folded edge DOWN.
  • Pop for 2 minutes, 20 seconds.
  • Remove from microwave and immediately add butter.
  • Reseal bag and shake vigorously for 1 minute.
  • Pour into bowl and enjoy!

Day 84 - Manic Monday {Holiday Edition}



If you are blessed enough to have today off, I hope you are having a wonderful day!

If you are at work right now and just going through your normal routine, I hope you are having a wonderful day too!

Both my husband and I are in the first category and are enjoying a "day off".

I don't know about you, but for me those "days off" seem to become quickly cluttered with errands and to-do lists.

Carving out a little time to relax seems to be the exception, rather than the rule. Still, I'm glad that all these things are getting done today, instead of the middle of the week after a long day at work!

I am thankful for the extra holiday this weekend. 

I am thankful that my husband is my partner in getting all our errands done!

I am thankful that we have so many fun things on the horizon. September is going to be a busy month, but boy-oh-boy, is it going to be amazing!

Day 83 - Super Short Sunday


My in-laws left this morning.

It's always sad to see them go, but I'm glad that it's sad. I know too many people who are relieved when their in-laws (and sometimes their own family) are gone...

I'm so thankful that I don't have that! 
 
I am thankful for warm pancakes and cool air conditioning.

I am thankful for a heavy heart that comes from the parting of friends.

I am thankful for a few extra hours of sleep after breakfast!

Day 82 - Cake and Candles


This weekend is my husband's birthday weekend... I can't believe another year has passed.

To celebrate, his parents and brother came down to visit and spend a few days with us!

I have mentioned my in-laws in the past, and what I said then still holds true.

It is so wonderful to have an actual relationship with my in-laws. They are not people that I merely tolerate on holidays, but people I can't wait to see as often as we can manage.

I am thankful for the time together with my in-laws.

I am thankful that my in-laws and my parents have also formed a close relationship.

I am thankful for another amazing year with my husband!

Day 81 - Prayers and Pollen

Fall allergy season is officially here. 

I know this not because of anything on a calendar, but because of my poor swollen sinuses. 

Exactly what you wanted to hear about, right? I know!

My head was killing me and yet I had to get through the day with my classroom of little blessings. 

I didn't know how I was going to make it through, but hearing those sweet little voices lift each other up to God made it all worth it.

    I am thankful for the truth spoken by little children.

    I am thankful for the fast acting action of Advil Cold and Sinus ;-)

    I am VERY thankful for the soft pillow where I will be laying my head momentarily!
